This trail mix makes everyone happy. Roasted salted almonds, cashews, and pecans, delish. Dried figs! Banana chips! Toasted coconut. Yep. Just watch your nuts (…) carefully since mine got a little over toasty after not following my intuition and leaving them in too long. No sugar at all, not even sweetened cranberries. And kid approved. Sweet. As trail mix is very personal, feel free to substitute anything for something you like better.
Scrumptious Salty Sweet Trail Mix
(Modified from Edible Perspective)
1 c raw cashews
1 c raw pecans
1.5 c raw almonds
1 c raisins
15 dried figs, de-stemmed + quartered
1 c unsweetened banana chips
1 c unsweetened coconut flakes
1/2 tsp salt
Pre-heat your oven to 350 degrees.
Add salt to nuts in a small bowl with 1 tbsp olive oil and stir to combine.
Spread the nuts in a single layer on a large baking sheet. Roast for 10-12 minutes turning once during the cooking. The nuts should be golden brown, not dark brown!
Add the coconut and roast for 5 more minutes, turning once half way through. Dont stray too far during this step, coconut can get burnt very quickly.
Let the nuts and coconut cool on the counter or in the fridge, then add the other ingredients and mix together.
Store in a sealed container (mason jar!) or reusable bags.
